One of the worries when it comes to cooking ground chicken is that it will dry out. Depending on what you cook that can be a concern. With ground chicken tacos or a chicken Thai salad, the sauce or dressing takes some of the pressure off this concern. With meatballs and ground chicken burgers, however, the key is not over working your chicken and not over cooking.
If making chicken meatballs, do not over mix before forming the balls, if making burgers - gently form the patties. Cook burgers and meatballs to 165 degrees, taking care not to overcook.
