1 lb Acabonac Farms ground beef or paleo grind
1/2 c bread crumbs
2 tbl tomato paste
1 tbl Worcestershire sauce
1 tsp salt
1 tsp ground pepper
1 tsp mustard
1/2 tsp onion powder

Gravy Ingredients:
1 medium yellow or sweet onion diced
1 cup (or 1 package) sliced white mushrooms
1/2 tsp dry thyme
1/2 tsp garlic powder
2 tbl flour
3 c beef stock
1 tbl Worcestershire sauce
1 tbl butter
salt and pepper to taste

Directions:
-place all steak ingredients in large mixing bowl and gently mix with clean hands until ingredients are fully combined
-form steak mixture into 5 oblong patties approximately 1/4 - 1/2 inch thick
-fry all five patties in large pan with a drizzle of olive oil over medium heat until cooked through and outside has browned (approximately 2-3 minutes per side)
-remove patties from pan, wipe out spent oil, replace with drizzle of new olive oil
-sauté diced onions until translucent (5-7 minutes)
-add mushrooms and cook until browned (mushrooms can be roughly chopped into small dice if you do not like the texture of mushrooms)
-add thyme, garlic powder and flour - stirring vigorously to distribute flour
-add beef stock and Worcestershire sauce - continuing to stir vigorously with whisk or fork to avoid lumps of flour forming
-allow gravy to come to boil and thicken (stirring continuously)
-set heat to low and whisk in butter until combined
-taste for salt and pepper
-add patties back to gravy and allow to warm through for a few minutes
-serve while warm
