Our grass-finished sirloin steak is cut from the sirloin primal, located just behind the short loin near the hip—an area known for producing flavorful, moderately lean steaks with a satisfying bite. This cut offers a perfect balance of tenderness and bold, beefy flavor, making it a versatile choice for grilling, pan-searing, or slicing thin for salads and stir-fries.

For best results thaw your sirloin steaks  in the refrigerator for 24 hours then let rest at room temperature for 30 minutes prior to cooking.

Our sirloin steaks are  best eaten within 12 months of purchase for optimal flavor and quality. For best results maintain a stable deep freeze temperature without fluctuations to prevent freezer burn or flavor loss.

Cooking Tips

Grass-finished sirloin steaks are naturally lean with a hearty, beef-forward flavor, so they benefit from a gentle, controlled cooking approach. Because sirloin can firm up if overcooked, keep it at or below medium (135–140°F) to maintain juiciness and tenderness. A quick 30-minute oil marinade helps soften the exterior, promote better browning, and provide a bit more flexibility before the steak overcooks.

General Tips:

  • Cook over medium heat to avoid tightening the lean sirloin muscle fibers
  • Sear for color, then finish low and slow for even doneness
  • Let rest 5 minutes before slicing, and cut against the grain for the most tenderness

Grill Tips:

  • Preheat to medium and lightly oil the grates to prevent sticking
  • Grill 2–3 minutes per side, then move to indirect heat to finish gently
  • Keep the lid closed during the indirect phase for steady, even cooking
  • Remove from the grill around 130–135°F, as sirloin rises quickly while resting
  • Rest 5 minutes and slice across the grain to maximize tenderness
