Our whole chickens are best eaten within 12 months of purchase for the optimum flavor and quality. For best results maintain a stable deep freeze temperature without fluctuations to prevent freezer burn or flavor loss.

Cooking Tips

Pasture-raised whole chickens have incredible flavor thanks to the bird’s natural diet and active lifestyle. They benefit from slow, even cooking to keep the meat tender and juicy. Because the meat is leaner and firmer than conventional birds, gentle heat helps prevent dryness—especially in the breast—while allowing the dark meat to become fully tender. A simple 20–30 minute oil-based marinade or a quick dry brine adds moisture, improves browning, and gives you a more forgiving cooking window.

Cooking Ideas:

  • Classic Roast Chicken: Roast at 375–400°F until the breast reaches 165°F and the thighs reach 175–185°F
  • Herb-Butter Roast: Rub softened butter or oil under and over the skin for golden, crispy results
  • Spatchcocked Chicken: Flatten the bird down the spine for faster cooking and crispier skin
  • Lemon & Herb Cavity Stuffing: Add aromatics like lemon, garlic, or herbs inside for deeper flavor

General Tips:

  • Pat the skin very dry before roasting for maximum crispiness
  • Tie the legs loosely and tuck the wings to help the chicken cook evenly
  • Let rest 10–15 minutes before carving so the juices redistribute
